With all you guys showing all the pix of the good eats for the superbowl and me not able to use the smoker this weekend I had to make up some comfort food or start to knaw on the walls. Just thought I would add a little something for dessert.

Looks good!!! In fact, mumma just passed by, peeked over my shoulder to see what I was looking at, said "thanks for getting the recipe, when are you going to make that?"

So, is this a share-able recipe?!?!?

Maple Dave:

Anything for you dude. Hope your Ma enjoys this cake

2 lbs cream cheese, 4 blocks (room temoerature)
3 large eggs
1 tbsp vanilla
1/2 cup white sugar
1/4 cup all-purpose flour
1 cup caramel (ice cream topping works)
1 cup ground pecan
1 1/2 cups graham cracker crumbs
3/4 cup brown sugar plus 1/4 cup reserved
1/2 cup melted butter
2 tbsp butter
3 apples, peeled and thinly sliced.
pinch cloves
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tbsp water
2 tbsp heavy cream

Preheat oven to 300 degrees

- Combine 1 cup brown sugar, ground pecans, graham cracker crumbs in a mixing bowl. Pour melted butter and incorporate well.
- Spread crumb mixture evenly over the bottom of a spring form pan and up the sides to desired height. Bake crust for 10 minutes and allow to cool before adding filling.

Meanwhile

- Using an electric hand mixer, combine cheese, sugar, caramel, flour until smooth. Add vanilla and incorporate. Add the eggs one at a time and beat until mixture is smooth. Reserve.

- In a large non-stick fry pan, saute apples, butter and remaining brown sugar, cloves, cinnamon and nutmeg on medium until tender. Place a layer apple slices in bottom of pan spacing about an inch apart.
- Spoon 1/2 cheese mixture into springform pan and spread evenly. Add another layer of apples followed by the remaining creamcheese mixture. Top with remaining apples.
- Return fry pan to heat and add water, stiring to deglaze sugars from pan. Allow sugars to begin to boil gently then add cream and stir to incorporate cream. Continue to stir until caramel thickens. Allow to cool slightly.
- Spoon caramel over apple topping and place in a ready oven. Bake for 50 - 60 minutes until centre of cake is almost set. Cool before serving.

Serves 2 to 10.. Wink

We just finished the last of it tonight.. Smile

Just a addition to the recipe, if you like, add a bit more apples to the top. Maybe use 4 apples instead of the 3 I have in the recipe. I made this one off the top of my head so... Thats the only thing I would change, well maybe some pralined pecans on top mixed in with the apples just to take it to the next level, that would be good too. Oh, and a shot of bourbon with the apples as they saute, that would be good as well.

Theres always next time. Wink

Good luck and let me know how it turns out for ya.

Roxy, you are killing me. This looked so good originally and now you are making it sound completely irresistable. Do you deliver?

Well I made this cheesecake a week ago, and it was ever so yummy. I have never made a cheesecake before, and all of this is pretty new to me, but this is a keeper! My son told me that it was easily in the top 5 cheesecakes he has ever had in his life, and he really likes cheesecake.

Thanks for the recipe. It made me look like I knew what I was doing and was delicious!!!!

George:

You bless me with your kind words George. But I got to pass the praise on to my Mama. She's the one that taught me to make cheesecake way back when I was a kid, though I will say this one does kick the pants off any she ever made.

Top 5 eh, damn I'll take that any day. Very Happy Very Happy

Zilla my friend, if I can get out of going to Sweden this fall I will be down there for sure. The wife has a wedding to go to and as much as I love Sweds they all get a yammering in Swedish and I sit there drinking vodka and before I know it... Laughing

Well! I never! Stood up by a trip to Sweden! Ha! Laughing I'd take a trip to Sweden too bro. I have family in Norway that I'd love to go visit too. Maybe in a few years. Stop by on the way and pick up a tan. That would confuse them. Wink
