I am new to this forum, but have been smoking/grilling for ages. I need some advice on smoking a deer neck roast. My friend has several and he tells me this is the toughest cut of the deer and it is usually thrown out because of that. Is this worth smoking? How should I attempt it? injection, brining, marinade, wrapped in bacon, etc. What should the finish temp be? Any wisdom would be great!
