Great looking grub guys. It looks like super sunday is going to be a BBQ feast. I just finished trimming and rubbing 3 racks of ribs.

Here they are St louised (?), rubbed, wrapped and ready for the smoker tomorrow.


Roy, I'm facing the same. Right now it's windy and just below freezing. I don't think it's going to get any warmer tomorrow, but I hope the wind dies down.

Got up a 2 am this morning to get things started. Its about 25 degrees and light snow. Perfect smoking weather Wink
Got 3 10 pound butts on with basic BBQ rub.
After 2 hours of cherry smoke, things are looking good. The smell coming out of the smoker is killing me

Morning Gentlemen. Everythings looking fine so far. Very Happy It's not too bad this morning here above freezing wet cold and dark.

Maple in the hopper. She fired right up. I'll keep it real low for a couple and just get a few more winks..... Wink zzzzzzz

You need to upload your pics to a host site. I use photobucket.com. It's free. You just have to sign up. Once you've got your pics uploaded, oyu can either copy the url or you can copy this image itself into your post.

Room for all Tony! And I'm with ya on the Steelers. Very Happy OK 4 hours in 125 internal flipped and jacked the temp to 250.

Here's a cross section, you can see the smoke ring. I soaked the butt in brine for 40 hours, the flavor of the brine only penetrated about 1 1/2 inches into the butt, but it was delicious! Razz

Man you guys are killing me with all that beautiful pork. Tony that smoker is awesome. Just switch to cool when your done eating! Laughing My beef is well on the way. As I mentioned I had 125 fat up after 4 hours so I flipped and cranked to 250. Well after another 2 1/4 I had 170! Shocked So I cut it back to 185 and now 1 1/4 later it's dropped back to 165 so no harm done. That's what I mean about the Traeger at 250 it's too hot. So now I'll stick to the low setting until 4 or 4:30 and I think I'll be close. Then if I have to go 250 for the last hour or so no problemo. Here is the baby before I flipped it back over. The last temp probe slide in real nice! Laughing

The smoke has been rollin' heavy today guys. Very Happy Fantastic looking eats everyone.

Tony - That's one cool smoker you got there. Super airtight.

It started out cold and windy. But I'm a soldier.


Slabs are on and kickin' like kung fu.


5 1/2 hrs. later they're ready to be wrapped for short term storage.


Since we're headed to hooters to watch the game, these bad boys are for the post game gathering.
