Before work this morning I fired up the WSM and rubbed down a 7.5lb Butt. I slathered it with mustard and Head Country Rub, and used Hickory for smoke. Now here is the kicker Mrs. K.A.M. has all the credit for this one all though she said no, She is the one that watched over this Butt for 11.5hrs. and it came out fantastic. She cooked up some skillet red taters and Ranch style beans to go with it.
The Butt all ready to go.
Off the cooker, Bone slipped right out for her.
I pulled it for her she was a real trooper she has been getting over a cold so I gave her a hand at the end.
Plated up with skillet red taters and ranch style beans and I gotta have my tort.

I was just looking at the pics and hadn't noticed who actually posted them yet, but when I read your reply I thought "Hmmm...must be the K.A.Ms." scrolled back up and there was confirmation!  |

I would think that you and the Mrs. should contact
food network and offer them your services. It could
replace "Down Home with the Neeleys."
And I think latern had the perfect name for the show
"Hmmm...must be the K.A.Ms."
I for one would watch it after all the cooking from the
heart that I have seen you both do here.
Did you go 225* throughout the whole cook?

Thanks Skidder, We don't cook on our Anniversary.
Thanks Brinnie, I am trying to get her to do the whole cook starting the fire and all then when its time to clean the cooker she can figure out how to get it in her dishwasher.
Thanks samson, it makes it fun as we both love to cook.
Thanks Beertooth, I use Hickory from time to time on pork or chicken, but I prefer Pecan it was a nice change up.

Thanks Boomer, She ran the cooker at 225° from around 7A.M. till 3P.M. the Butt stalled at around 165° so I had her bump the heat to around 250° I pulled the Butt at 195° internal at around 6.30 P.M. If I replace the Neely's will they make me act stupid like them or can I be serious I am not much on showmanship.
Thanks Okie, it was great although Mrs.K.A.M. being sick could hardly smell or taste it.  |

I think this is closer to my vision of pulled pork perfection - no slaw, no bun - ranch style beans and flatbread The red skin potatoes look great too! I'm back on the path to enlightenment for me again.
It's easy to see WHY there isn't a day when at least one of you two doesn't cook - how can going out to eat possibly compete with this?  _________________ Let's hope SoEzzy can ditch his heavy hand on photos in 2016!
