I'm new to this forum and have very little experience with smokers. I have a brinkmann offset pitmaster and used it once with terrible results. My family asked me to give it up, so I covered it and its been sitting for 4 yrs. I stumbled onto to this website and found i wasn't the only one with this problem. I'm still waiting for alien to send me the measurements for the modifications so I can try it again. I'm more of a santa maria style bbq chef, I like to cook over red oak. I have a large tandem axle bbq that I use several times a year. the grilling grates are 3 X 4 feet and can be raised and lowered manually, its gear and chain driven.
Looking forward to all the help I can get with my smoker

Welcome to the ring KennyG. Witht he right information the offset isn't that difficult, it just takes a little practice and experience as well as good fire management technique. You've come to the right place to learn the craft.
