We have tested these a lot and sold a bunch of them. In our smoker it takes around 1hr. @ 250 degrees. Using fresh 80/20 they start around a 1/2 lb. And are 3/8 of a lb. When finished.
We never wrap them and pull them at 150.

Sorry I just realized how old this thread was. I'm not sure how I even came upon it.
