I am going to try some country style ribs this weekend. any suggestions on fat on or off the ribs and weather or not to wrap them up tight or let them cook open on my Traeger 075? Just learning on my new grill. Cooked a roast last weekend and thought it was kind of tough? cooked on 180 - 200 for about 4 hours and smoked with hickory for about 45 min the taste was great but thought it was a little tough? any help here??
