Please don't call me a heretic or boo me off for my first posting.
Okay, I am still fairly new to smoking. I went from a cheapo vertical electric to a BarBChef. I am very happy with the smoker and features. I have also found this forum to be very helpful. I don't really have a problem with fire-building or maintaining (I was a Scoutmaster for 7 years). But I do have a time problem.
I just ordered an Afterburner, and have read some comments about it. I asked Ed if I could remove it easily, and he said I would never go back to sticks or charcoal. Granted it is his company.
But I am wondering if you took all things being equal (rub, sauce, time, meat, etc.), does the "real" fire really make a much better Q? The afterburner does have a good, clean and simple option for providing the smoke, but I am wondering what everyone's experience and opinions are.

I have one and love it. I still use the electic part, but switch it over to the gas smoker when I need to bump up the temp.
The gas adjust is kind of hard, but once you get the temp right, you're okay.
Taste is fine. I think a champion stick burner could make our brisket taste like dog food. But everyone at my house raves about my Q.

I believe this same sentiment was conveyed when they invented the oven and indoor cooking, and here we are several years later, still longing to cook outside
All kidding aside, I always suggest to everyone to find the method that works best for them(wood, charcoal, electric, gas, and yes...even pellets ) and stick to it. As long as the method works for you, you'll keep at it, and thats whats important...how you get there is a matter of personal preference.

Pellets, we don't allow pellet cookers in here do we First it's pellets, then it's electrics, heck then we'll let anyone in as long as they have a love of BBQ.

I use gas assist to get the fire going, but not for heat. Give me logs any day for great BBQ, including fantastic brisket!  _________________ BBQMAN
