here in ky. we have a lot of what we call water maples? can this be used for smoking?

Charlie, I am not sure what water maple is, I would guess you would mean either Boxelder/Ashleap Maple or some type of maple similar to what we have here in Montana called Mountain Maple, in Washington state and the coast it is called Vine Maple. Both of these may be used to produce Maple smoke. Box Elder is very light however and will burn up quickly, Mountain Maple on the other hand is the hardest Maple I have come across and would work very well. If you can get some pictures I may be able to identify it for you.

Wikipedia shows water maple as an alternate name for silver maple. We had several silver maple trees on our property when we lived in Northeast Ohio.

Most of the local maple trees where we live now have a broader leaf, but a silvery back, so some call these silver maple. But the LSU web site shows they're actually called Drummond Red Maple.

Well, Silver Maple when thoroughly seasoned has your classic Maple smoke, but is one of the softer less dense Maples, when a little green it has kind of a nutty smell, but the smoke is rather nasty.

not sure about the water maple but here i was told we have water oak in which i was told the smoke smell is nasty. If you have a place to burn some wood give it a whirl and give it the sniff tests

We have several water oak trees on our property, and it's really common in the wild in this area. I've used water oak for low-and-slow smoking and it's worked well for me (seasoned wood, not green). Here's the LSU rundown on water oak (Quercus Nigra)
