|
|
| Hi all. I'm planning to do some smoked corn on the cob for thanksgiving, but all the recipes I've seen involve corn with the husks still attached. I live in Florida (where good Midwestern crops go to die), and the only corn I can find is that shrink wrapped crap that's mostly husk-free. Does anyone have any thoughts on how I can smoke this "corn" without burning it or wrapping it in foil so tightly that no smoke penetrates? Thanks! |

Maybe its just me, but I dont like smoked corn on the cob .
It has to be grilled hot + fast with the husks on.
Just my 2 cents.

I agree. You want it to carmelize a little bit. _________________ TW

This may be just a crazy thought but you should be able to get a package of Tamale Husks (basically dried corn husks). Soak them in water then wrap the corn and use twine to tie them on the corn. We tie our husks on in the same way. I don't see why it wouldn't work. _________________ Homemade offset smoker 24"x48"

What are you cooking on? If it's a verticle you might try wrapping the ears in wet burlap. If it a horizontal you might rub them with olive oil and just put them in a disposable pan. The oil will keep them fron sticking to the pan and not affect the flavor of the corn. Use regular not extra virgin olive oil. You could use butter but I don't know if it would burn. _________________ The Demolition Man - Demolition Man BBQ |
