Let me start by saying if someone has already done this let me know and I'll give you the credit. I thought of this a while back and finally tried it. I smoked a pork loin yesterday and trimmed and sliced it today;

The wife and I went shopping and came home with Jalapeno Jelly, Apple jelly, and black cherry preserves. I mixed these with cream cheese until they "looked right". I tried to roll one but that didn't work well, so plan B was to cut bite sized pieces of the loin, warm it up, add some of the cream cheese/jelly mix and put a toothpick in it.

The apple let more of the pork flavor through, the jalapeno gave it a little more bite, and the black cherry was my fave.
So what do you guys think?

Just a quick update, the wife just got home and mixed some of the jalapeno with the apple and said that was the ticket. Maybe 1 part apple jelly to 2 parts jalapeno jelly to 3 parts cream cheese? Details yet to be worked out.
I also forgot to mention that the remainder of the pork loin is going in to some of Alien's smoked mac & cheese Smile

Sounds interesting, How about putting some inside the meat and rolling up? Kinda inside out thing?
