I need help controlling the heat....my new custom built smoker maintains the ideal temp ( 225-250) with not too much effort, the problem I have is with the meat closet to the firebox, if I place ribs, for example, they will get burnt because of the high temp in that area. What I am doing right now is leaving that grate space closet to the firebox empty (no food)….my smoker is not very big and I need that space when I have a large group of friend...Help please  |

search for "deflector and plates" in the search at the top. this will push the heat further a long the pit and may cool that cooking area enough to have you use it. _________________ Here's a change Robert.
