This goes great with Q
Dirty Rice
Paul Prudhomme
Spice Mix
1 ½ tsp Cayenne pepper
3 tsp Salt
3 tsp Black Pepper
2 ½ tsp Paprika
2 tsp Dry Mustard
2 tsp Cumin
1 tsp powder Thyme
1 tsp Oregano
4 tsp Olive Oil
½ lb Ground Pork
4 Bay Leaves
1 large Onion (chopped)
2 ribs celery (chopped)
1 green Bell Pepper (chopped)
4 large cloves Garlic (finely chopped)
4 Tbl butter
3 cans low sodium Chicken Broth (4 cups)
¾ lb Chicken Livers (coarsely chopped)
2 cups long grain Rice (not instant) - rinsed
Mix all spices together in a bowl
Saute’ ground pork in oil until cooked (2 min)
Add vegetables, sauté 7-10 min with lid on or until soft, stirring occasionally
Add spice mixture – stir well
Add Chicken broth, deglaze, then add butter
Add Chicken Livers, stir 2 min
Add Rice, reduce heat to low and cover
Cook 20 minutes, turn heat off and leave for at least 5 min more – lid on _________________ Masterbuilt Electric Smoker

Hey Smokerat - lemme ask ya - how prominent is the taste of the chicken livers in that recipe? I ask because any time I've eaten any kind of liver in the past it just about makes me gag. I've tried several dirty rice recipes, they're all usually fairly tasty, but I always shy away from the liver and substitute something else.
But since yours comes from Paul Prudhomme, and I just about worship that man's talents, I just had to ask. Might be the first time I get up the nerve to keep the liver in there. _________________ ============================

| Don't use the liver, use Jimmy Dean bulk sausage or the brand of your choice. |

You can barely taste the livers because of how spicy the rice is, but if you're a non-liver lover, it can be substituted or left out entirely.

| To me the liver is a key flavor in this rice. If you don't like liver, you may try adding a smaller amount. One very important thing to remember is this dish gets better if made the day before. I made it the day before Thanksgiving and reheated on T-Day. Much better flavor after setting overnight. |
