Well after yesterdays first butt smoke i have about 6 pounds of leftover pulled pork. There is only so many sammy's a fella can eat. Hoping you folks with vastly more bbq knowledge than me can toss me a couple good ideas. Thanks

Carnitas...basically a soft taco with shredded pork instead of beef in it. I've been known to make burritos, enchiladas and even fajitas with it instead of beef or chicken. I've even used it in chimichangas.

Make a pizza crust, spread your favorite BBQ sauce on it (tomato or mustard-based is better than vinegar-based), slather it with pulled pork, dice up a red onion and spread it around and then top it with shredded cheddar and mozz. Bake until crust is done and cheese is gooey.

Make a batch of Brunswick stew or a Kentucky Burgoo (search FoodTV.com for recipes for both). Freeze some for your next batch of beans.

Hell, I like to turn it into appetizers by schmearing a little cream cheese on a Ritz cracker, top it with a little of the pork, a small dollop of sauce and a piece of onion.

Pulled pork is a very versatile leftover.

BigOrson had some great ideas...in fact i am having adobo pork tacos tonight and making enchiladas as well. The BBQ pizza is another good idea, i have made it a few times and has always been great.

One of my favorite things, either as a meal for myself or as appetizers to share, is pulled pork nachos. Simple...just chips, cheese sauce, jalaps, pulled pork, and sauce.

Pay Attention close attention Exclamation

Recipe:
1 small styrofoam cooler
1 block of dry ice
1 food saver vaccuum packer
1 Fedex Overnight label
5 24" lengths of duck tape

Instructions:

Place frozen leftover pulled pork in foodsaver bag, vaccuum pack and place in cooler with dry ice. Wrap Cooler w/ lid with duck tape and slap on the overnight label. Delivery label made out to me.

Pulled pork freezes real nice,make a batch of beans and throw some in,make a nice breakfast sammie,fried egg and pulled pork is awesome.

As noted above.. BBQ sauce, pulled pork, red onions, cheese (I only had Mozz. at the time.) Same goes with pulled chicken, brisket, whatever.

Save it for when you make beans durng your next smoke.
Mix Chopped Onion, Beans, Pork in a shallow pan with some Brown Sugar and rub sprinkled on top.

I also warm it up in some Chorizo for tacos.

I always have 4 or 5 small packages of leftover PP in the freezer, usually a few ounces each for beans and other dishes, for when the smoker isn't running.

Enchiladas, tacos of course. I just had the thought that pulled pork could be added to lasagna, that would be some good lasagna!

I can't believe no one mentioned BBQ Spaghetti.
Saute green pepper & onion
Add your favorite bbq sauce & pulled pork
Serve over noodles

It's also good if you put it in a casserole dish, top with jack cheese & bake for a bit.

Deep Fried BBQ Buritto.

Fill a large buritto with pulled pork a little sauce and some pepper Jack cheese. roll and fold in the ends and deep fry until lightly browned. serve a little sauce on the side.

I recommend a chilled glass of Dog Fish Head 90 Minute Ale as a nice accompaniment.

BBQ Egg Rolls

Pull Pork
Favorite Slaw recipe
BBQ Sauce

Coat the pork with your favorite sauce.
Put some pork and slaw in egg roll.
Whip up an egg and brush on egg roll edges.
Roll up egg roll (not too tight)
Deep Fry for about 3 minutes

Serve with more sauce.

The pulled pork goes great in red beans & rice, gumbo or jambalaya. I have a foodsaver its about the same work to cook 1 or 4 butts. I rarely cook only 1 and vacuum seal the rest .

I used it in a smoked meatloaf last Sunday.

Kinda did it like a fatty. Just layered it in the middle with some bacon, cheese and green peppers.

I agree ABT meat, enchiladas, nachos, reheat....Pulled Pork by far is my bread and butter of smoked food. It is so versitile,forgiving, and yet the tastiest off all in my opinion.
