If you are having sides I would guess 1/2 slab per person.

If there are womenn and children, half slab per person is plenty. If a bunch of young, big guys, you may like to go slightly more.

Way too much. If you are serving sides, bread, dessert, then 3 ribs/person is plenty. Spares...Trimmed to St. Louis style should give you 3 people to a slab. 10 slabs min...I would prolly do 13 to make sure, but I think that would be more than enough.

3 St louis trimmed ribs would make me nervous. It would depend on the group. If it was a group split with men and women/ small kids AND it was an actual catering gig I would feel better.

But, if it's a group of friends or relatives then there's no way even with the split 50/50. No etiquette is followed then. The men and older boys rip through some reebs. Laughing

I have to agree Lantern, My 20 year old son and some of his cousins can rip through a slab plus sides. I'm a 250 pound man, and I'm the little guy in the family. Catering would indeed be a portion control, but for family and friends, eat too much and drink too much is the rule, not the exception around here.
