This past winter we were asked if we sell by the pound?(the market opens at 8am so a lot of the people
are gone by lunch time, so selling it to go made sense to me)
At the time we didn't, so the next week I had some to-go boxes and a scale and we started selling by
the lb. The people liked the idea and sales increased
through out the winter. We will be doing it again this
winter. I found a farmers market up north to go to
for next summer and will sell by the pound there also.
Just another idea to increase sales.
Last winter we got $7.001/2lb. and $10.00lb. this year I plan a $1.00 increase. _________________ Curt

11 bucks a pound?
Wouldn't fly here (9 bucks max), but if they're buyin'.........sell the hell out of it at that price!

I'd ditch the clam shell plates and the scale.
Get some Styrofoam 'squat' containers with lids in 8oz and 16oz sizes. Test them out at home and weigh them to satisfy your mind about how full you should make them.
Sounds like a pretty easy and lucrative gig.

Depending on how the container is packed, that method won't work Jay.
Is it a pound, or a pound and half?
I get $12.00 a pound for PP at the market I work at.
Why sell it for less when I get 4 sammies out of that same pound, and even with the cost of sauce and rolls it is a $15.00 per pound sale.
I actually don't sell by the pound other than a few clients that ask, otherwise I sell out of sammies every Saturday!
I'm also not a big fan of styrofoam of any type, and prefer wrapping in HD foil. Strofoam containers are THE most environmentally unfriendly packaging known to mankind..........................
There is a biodegradable "green" container available for just this type of thing:

The market is on Sat. and we sell it hot right out of
the cooker. Many of my customers say a lot of it gets

I wish I could get $11/lb (even $10 would be nice).
BBQ Man, I've been trying to get my supplier here to carry the green containers, but they say that they've tried but can't sell them. They wouldn't special order in the small lots I would need. Even though they are slightly more expensive (just a few pennies per unit), I would use them (I feel the same way about styrofoam). If I order the green units and have to pay for shipping versus picking them up at the supplier on a regular trip, the unit price goes way out of line. _________________ I likes to eat 'da pig!

What BBQMAN said. The customers check out the needle
on the scale real close(a lot of seniors here ) I go a point or two
over the lb-1/2lb mark and they go away happy. _________________ Curt

I cater w/Chinet Poppa, and to-go orders are packaged in foil.
A pound of PP fits nicely in a 2 1/2 pound cardboard vending tray (cheap) wrapped in foil.
But for those that need them, there is an alternative out there............. _________________ BBQMAN

I cater with Chinet as well. Even though I'm no eco-nut (at least I don't see myself that way), I think it would be sinful to not spend less than $2-3 more per party to do the right thing. _________________ I likes to eat 'da pig!

Funny you should mention scale viewing of customers. We purchased this scale when we first started for that very reason (event vending). http://www.americanweigh.com/product_info.php?cPath=63&products_id=233
It displays weight, price per pound and total dollars due on both sides of the scale. It is fun to watch a new client walk up, ask for $30 worth, wherein we pull product from the pit, slice off our best estimate of $30, usually slightly over. While they are looking at the scale figures, and the product, we usually get ‘give us a little more’ comment.

Curt, just like that Inside Edition expose' last night, no hand washing required after tree hugging!
Texman, SWEET scale my man, I really like the battery option (most of those types don't offer that and need to be plugged in).
But wow man, $400.00 for a scale- that's a little pricey even for a big spender like myself!  _________________ BBQMAN

Being battery operated saves us on booth fees and all of the headaches assciated with running an extention cord.
True on the price, but we only had to sell 64 lbs of product to recoup our investment, besides we saved more than that building our own pit.
I thought everyone was rich and retired in FL?  |

Plastic bags and a cheep scale. I add the “baker’s dozen” approach to the pound bag and charge $9.00 each. Sell out every time we have any leftovers. Events like the local chamber of commerce luncheons, I always smoke more than needed just for selling by the pound. _________________ When I'm not fishing, I'm SMOKING Que! |
