Thanks so much for posting this review.

In my experience using water in the waterpan I have found that if the environment gets oversaturated that the temp inside the cooker will have a hard time getting much above the boiling point of water. You then end up adding more fuel to try to get higher temps but you are actually just putting more steam in the cooker giving you the opposite effect and sometimes the temp actually drops.
That is just based on my observations using the cookers and not anything I've read anywhere.
But that's not to say that water can't be used. Roxy uses water in his with great results. I have not been able to do so. _________________ Love the voodoo that Q do.

I think the WSM runs a bit hotter, as it has a larger gap between the water pan and the sides of the cooker, if you put your food too close to the edge of the cooking grate on a WSM it'll cook quicker than in the middle.

As the one who put the battle together, I have intentionally stepped back to allow others to offer their unbiased insights and opinions...didn't want anyone to think I had a hidden agenda for one over the other. I can hardly wait until I get the opportunity to cook on both units...hopefully this weekend!
I don't know about the rest of you, but I am lovin' all the attention both of these smokers are getting...just fanning the flame of interest for barbeque as a whole!
