Well, I finally have a weekend off, So im going for my second attempt to smoke a brisket. I've been checking out the packers at walmart or i was thinking of going to my local butcher shop. Are walmart packers going to be the same as my butcher shop will be??? My next question is, I have a chargriller with all the mods. Has anybody heard or has done the fiberglass rope around the lid to keep more smoke in and heat???? I think ace hardware carries the rope....... Thanks.......... Depends on what your wally carries. Mine has select, they also will get in choice, just depends on the day. Call your butcher and asks if he carries choice or Certified Angus Beef brand briskets.. I can get CAB for not much more than select. The end product is much better. Try to get a choice cut if you can. _________________ Team Diamondback Q

I have a Char-Griller Super Smoke w/SFB, without any mods and it does realy well in maintaining a good smokey flavor. I'd probably get the meat too smokey if I sealed it off with the rope, I'm use to the way it is now.

If the packer brisket wrapper still has the packing house markings on it (like "Excel" or "IBP", or some such) at both places, they'll be pretty much the same unless one only carries USDA Select and the other carries only USDA Choice or CAB or some such. If one has the packing house mark, and the other doesn't, be wary of re-packaged packer briskets - they may have been pre-marinated in some proprietary solution along their trip to the meat case. Just go in with eyes wide open.
The vast majority of beef I've cooked outdoors is what's now USDA Select (used to be "USDA Good" years ago). It can also be made tender, and no two cook sessions are ever quite the same, brisket to brisket. If you can get USDA Choice or CAB for a little more than USDA Select, go for it! I find USDA Choice at Super Target actually a few cents per pound less than USDA Select at Sam's Club in my area, so I usually get my local briskets at Super Target. _________________ Let's hope SoEzzy can ditch his heavy hand on photos in 2016!

I also have a CG w/mods. I have used it for almost a year now. My suggestion to the rope question would be to do what I do. Measure out aluminum foil to the length of the front, back and sides. Fold it over so it over laps inside and out using the grates to trap it down. Close the lid on it and fold the foil up a bit to make a seal.
I do that and it works great. If that seems to make a difference to you and you don't want to do that every time, then maybe consider the rope.
At least that way you can kinda try the idea and see if you can even tell a difference. I personally think it helps especially when it's cold or windy. _________________ Camp Chef Pro90 Stove w/ Griddle

I can't speak to the beef, but on the rope issue, I've heard several people say that it can wear and put shards into your food. What I did was buy some flashing and used that to seal the sides. See below. You can also find some door flashing that works well, but I wasn't able to.
