Been done before but here's my variation. Might sound crazy but it's incredibly good.
Core out a Jalapeno and keep whole.
Pipe in your favorite cheese mixture (mine is cream cheese, cheddar and cilantro.)
Wrap with a whole piece of bacon.
Smoke until bacon is crispy.
Let cool...
In a double boiler melt 12 oz of semi-sweet chocolate chips.
Dip Jalapeno/Bacon into chocolate...once then cool...second time to get thick coat.
Drizzle some chopped nuts (almonds or pecans.)
Place in fridge...cool. Enjoy _________________ Daniel

another variation is...
dust bacon with your favorite ground pepper (ie ancho, chipotle, or cayenne)
smoke until crispy
cool to room temp
melt some chocolate (dark or milk; about 12 oz) in a double boiler
coat both sides of the bacon
sprinkle chopped nuts (pecans or almonds)
sprinkle sea salt

This is too funny,
This last weekend at a comp in New Holland PA. 8/23-8/24
We did an anything butt or Chefs choice. I chose to do a Bacon Cup diped in chocolate, Filled with creme Brulee, And topped with a Raspberry mouse.
I guess great minds think alike!!
But we tanked in the scoring, I liked em but I wont be turning theese in anymore. just a little too far out there I guess

I find that the filling in say the ABT or in your case the creme brulee isn't so appealing.
People are more drawn to the simple cayenne dusted crispy bacon dipped in chocolate with nuts/sea salt sprinkled on top. _________________ Daniel
