It's going to be a long day.
I had just got to work when I get a voice mail from my wife. "You're the proud father of a brand new smoker."
The WSM came today! Woohoo! Only 5 more hours to go before I get to touch it. I have the eyelets to go on it but my Tel-Tru thermo won't be here for another week or so.
Time to start a new adventure in smoking!! _________________ Camp Chef Pro90 Stove w/ Griddle

I really want to do a brisket, but I need to get the feel of it first. I bought it mainly to do pulled pork so I think I'll do a couple butts. _________________ Camp Chef Pro90 Stove w/ Griddle

Congrats Beertooth but I'm way ahead of ya on this one. Here's a pic of my second mod the first was the Brinkman charcoal pan. Then I drilled through the side and installed this electrical thing that the electrician from work gave me. It fit's two Maveric probes perfect and the Tel-Tru in the lid. Two 6lbs. briskets going as we speak. Put them on at 9:30 a.m. and am at 154 internal at 6:30 with a smoker temp of a consistant 235 all day. You are gonna love this thing. I work nights and slept all day and look.

Just bought my first WSM as well. Already installed the brinkmann pan and eyelets from bbqguru. I have the U4 bit but, am waiting for teltru to ship my thermometer.  |

| I tell you I don't even know why I still own my offset after using this! I guess I'll keep it for now but the WSM really is set it and forget it. No temp spikes all day. Maybe sell it and get me another WSM. Nope just kidding. |

| Oh yeah it's called cold smoked beef brisket. It's the newest thing. Just kidding this was when I just put the brisket on. I forgot to take it outta the fridge to warm it up a bit. |

| Gonna put handles on tomorrow and maybe figure out a wheel setup. Foiled the brisket a while ago and am waiting for temp to move up. 11 hours and at 175 in foil. |

| These things are great (WSM's). I haven't touched it all day and am having a temp of 225 to 235 all day. Foiled briskets and waiting for flat to get to 200 so I can blanket. Tomorrow I will make chili out of the flat and slice the point. Thanks all for your help. Just pulled the meat (flat) off the smoker at 201 degrees after 13 hours. Will pull and make chili tomorrow. The WSM performed perfect. I should have listened to everybody and bought this smoker to begin with. I think a lot of it had to do with the shape of it. I owned a Brinkman bullet vertical and associated it as the same kind of smoker. Man was I wrong big time. There was absolutely no chasing of the temp control at all. I will admit when I'm wrong and I was wrong when I bought my offset. |

i do the same thing, right from the fridge to the smoker, seems like it takes the smoke better and i get a better smoke ring _________________ bullpin double barrel smoker

Beertooth,
Congratulations on the new member of the family, I'm sure you will be a proud papa and post lots of pics.
Just a suggestion on the placement of your thermometer from my experience, at first I drilled through the rivet on the top vent and put it there, after a few cooks it was really gunky from the grease and smoke and became hard to read so I drilled another hole on the opposite side of the vent and placed it there. It really turned out for the better because I usually run with the two back bottom vents closed and keep the vent under the door open a little, by placing the thermometer on the opposite side I now turn the lid so that the vent is on the opposit side of the door and it seems to have helped with air flow, I don't have to turn the top grate 180* to brown up my chickens any more.

Skidder - Glad your lovin it! I put mine together tonight. I put one Guru eyelet in and am waiting 'til I cook to put in the other. Called Tel-tru (in NY) and they said they will ship my BQ300 on the 25th.
Either way I am cookin this weekend! Oh yeah! I have two digital thermo's with three probes.
