Hey all,
My mom gave me half of a pork loin. It was about 8 or 9 lbs and I just rubbed it and put it on indirect heat on about 250 degrees with a handful of smoke chips.
What do you all recommend I take it off at? I normally cook chops until about 145 degrees.
The thickness of the loin is about 3 1/2 inches or so.
I was thinking about 4 hours and then toss her in the cooler for an hour or so should do the trick but I'm not too sure.
Any advice is greatly appreciated, as it's cooking right now and it's not a real fatty cut....there is a nice fat cap on the top though.........Might have been better to cut it into chops but daddy wants pulled pork!!!!!

| Take it off at 140, tent with foil for 20 mins or so & serve. 3.5 -4 hrs should be close. |
