anything I need to know that deviates from using lump charcoal + wood chunks?

I have a char griller outlaw with sfb. a couple thicker logs and a few kindling size, and a couple in between. not much to work with, but I shouldn't need much more should I?

I'm hoping to use the longer burn of the logs to finally branch out to a brisket or some butts.

any help is much appreciated.

Don't try burning anything big, by the time you get the fire small enough to use, it will smolder and that is not good. Build a bed of coals with lump then feed your smaller pieces of wood say every 30 min. It is a pain but the results are well worth the effort.

Here's a good method that I've tried and it worked well. Posted by AlienBBQ a while back.

Cooking with logs is alot different than using all lump, just make sure you have a small hot fire and well seasoned wood, look for thin blue smoke and you should be okay.I always set a couple splits in the fire box to preheat.

Thats all great advice,if You can place a few splits in your firebox to preheat as C/Bacon pointed out Dont I repeat Dont let them get so hot they catch on fire .This happened to Me with a bunch of splits in there and It was double trouble. Good luck, And you can always get great advice from these folks... Cook on.... Whitey
