We did an unsanctioned rib comp last Saturday, And Larry Raymond (the founder of Sweet Baby Rays sauce) was one of the judges.
The organizer sold 1,000 tickets which allowed spectators to sample 2 ribs from each team. Each team cooked 500'ish pounds of ribs to handle the crowd. We won the comp in conjunction with "Billy Bobs" bar & grill providing the rub, sauce, and the rest of the team.
I was bummed out that I did not have a chance to get a picture of us together that day in front of our company banner as he came to each competitiors area to talk about equipment and tactics.
Anyways I get a call from the group I cooked with and they said to come down for dinner we are all meeting up to talk about next years comp. and some other things we are doing together this year.
So I am sitting at the table and guess who pops up behind me to say hi?
The man himself, Mr. Larry Raymond.
Of course I do not have anything but a camera-phone with me so this is the best I could do for a picture.
I am all greasy lookin from cleaning our equipment all day and getting ready for this next weekends gigs.
Larry and I talked about his son and the win his son got at the Naperville IL rib competition. His restaurants in Illinois, and he wants one of our "I Beat Anorexia" t-shirts for himself. And I didn;t have any of those with me either! (WTF?) So i'll ship one to him this week.

So Harry, I assume you DID take the opportunity to tell Mr. Raymond how much you despise his sauce, right? _________________ Sa-Mokin Competition Barbeque

Well, lets just say I never complimented him on the recipe.
Maybe I do not like it becuase every boiled-rib selling restaurant uses his sauce straight out of the bottle to drown their boiled meat even further.
Maybe that is why I avoid it, I do not want any ties to those type of bad ribs. I am sure others would distance themselves from products used for bad or illegal purposes too
His sauce is wildly popular in many parts of the country, He created a monster.
I do not like Budweiser products either, but they are the largest selling brand of beer. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

So you dont like it because other restaurants use it? Have you ever even tried it? I'm sorry but your logic is retarded.
Also, if you are trying to distance yourself from a product why are you bragging about meeting the maker of that product? _________________

yes I have tried it, I do not like either the sweetness, or the consistency of it. I can tatste the thickening agent and it has an "off-Flavor" to me.
I bet his original recipe before the bottlers got their hands on it was good, But bottling a product and bastardizing it to meet the needs can ruin something in a hurry. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

I bet you have no idea what you are talking about. I'm guessing SBR's sauce tastes exactly how they want it to.
But lets ask our resident sauce bottler - Sa-Mokin, did you have to bastardize your sauce when bottling it, to "meet the needs"? _________________

It seems like it would be more impressive to distance yourself from the cooking method (boiling) than it would be to distance yourself from the sauce. Wouldn't your fabulous ribs with this sauce be better than boiled ribs with this sauce ? It's fine that you don't like the sauce or Budweiser, do you avoid ketchup since it is put on boiled hot dogs? _________________ _______________________________

My sauce is made to the exact specifications that I developed, including the name brands of the ingredients that go into making it, right down to the Morton's salt. Co-packer deviates from it in the slightest and they've made the last bottle my sauce.
Not trying to hang you out to dry here Harry, but after having read your comments about SBR, I just had to ask. _________________ Sa-Mokin Competition Barbeque

SBR is a very good sauce but Sa Mokin's sauce is alot better. You can taste a difference in the freshness. I dont know how else to explain it other than that. Out of the common bottled sauces on my local store shelves, SBR really is good. Now compare it to Sa Mokin's and there is a noticeable difference.
Back on topic though. I think its cool to meet someone who has done well for themselves by doing something that you like to do (if that makes sense). I met Tony Stewart once and I now have an appreciation for him. _________________ Traeger 124, 125 |

Does his sauce taste more like Sweet Baby Ray's or Sa-mokin's?

I will take the time to say congratulations Harry.. Way to go winning that comp with that dog shizzle for a sauce.. IMO it says a lot that you can take that bottled vomit and turn it around so that it tastes half way decent to be able to get a winning product.
Good for you dude.
By the way, Patrick is a person of integrity, I got that from him the first time I met him and I know he is more concerned about his sauce being what he wants it to be than making a ton of dough.. Not that there is any thing wrong with a ton of dough.. _________________ Chargriller Akorn

That's a fact, thanks Roxy, I do appreciate that!
And I can appreciate Harry's enthusiasm. I had the pleasure of meeting Danny Head (owner of Head Country) a couple of years ago. He sat and talked for two hours. The guy is quite a character. _________________ Sa-Mokin Competition Barbeque

I am glad Roxy understands what I mean.
I just do not like the flavor of SBR sauce and will not use it for that reason.
I do not care if everyone else loves it. I think it covers too much and does not compliment the flavor we strive for.
We like to stand out fully from the crowd, not try to emulate them.
I might be seeing Larry in the coming weeks, to get one of our shirts to him. I will ask him if his original hand-written recipe is the exact same flavor and consistency as what is now being packaged and sold.
During our last conversation when he mentioed his son taking the win at Naperville, He mentioned that they also took 2nd in sauce, and it was a "Doctored" version of the original hand-written recipe. So that might be a clue right there that it was not the same as the bottled multi-million in sales sauce. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |
