This happens to be 400 series stainless. The better the steel the longer it will last. The mods that I will make will be out of this stuff only because I have it in stock and the cost of stainless has gone thru the roof.

Wait until I put some fire on it and make sure it works as advertised. I have made the templates and have the steel on hand. Keep in mind that these are measured to this model smoker and may need some tweaking to fit others. This one of the reasons why I made the end section in two pieces for easy modification. This next week I am working on the removable firebox shield and grate.

Roxy: I paid 169.00 for mine and got it at Lowes. If you have a lowes in your area maybe they have them or can get them?? The only difference on mine is the firebox also has a door on the side for access. Cool

Using three digitals and the new POC gauge I measured the temp in the smoker without mods. There was a 70 to 90 degree variation from fire box to smoke stack at the regular grate level. With the mods installed (35 degrees outside air temp) I documented a 15 degree difference from the firebox end to the smoke stack end on the lower level and 20 degrees hotter on the upper level. I believe if I monkey around a little with the plates I might get better… but I can live with the current numbers.

A couple of observations with using adjustable channeled tuning plates:
1. When you get a burst of hot air from the fire, it shows up at the far end of the cooker (away from the firebox) first. Then it equalizes as the steel baffle heats up.
2. Opening the smoker in 35 degree weather for less than 5 seconds (to make sure the probes weren’t touching anything inside) causes a 50 degree temp drop in the cooking section that takes about 5-10 minutes to recover.
