I've been using a Newbransfel offset for about 4 years now. When I got it I reviewed all the mods that were out on the internet, ie. extended smoke stack, baffel systems, gaskets on doors. I found that the best investments are: a) A meatloaf pan full of sand at the opening of the firebox, on the bottom shelf. fill with water when you start your cook. B) An aluminum half pan full of water next to the meatloaf pan. and C) An expanded metal box for my load of Kingsford charcoal. The only attention this setup requires is the occasional addition of wood chips for smoke and additional charcoal for extended cooks. I made my charcoal box as large as I could and still get it in the fire box. I fill it up and start 1 full chimney of coal. when all the coal in the chimney is gloaing/grey, I add it to the full box. This gives me about 10 hours burn time. (Can we say full nights sleep?) These are cheap and easy mods that "Anyone" can do and my useable cook surface is within inches from the firebox. (I use that area for quick browning)

I have just returned from a conference this week and am busier than a …. Well you know what I mean. I have thought about finishing the mods with a version two that smoothes out the flow of hot air in the smoker but I haven’t gotten to that part of my checklist as of yet. Edskull got a hold of me and I told him that I could send him a heat deflector out of some thinner mild steel right now. The other mods are out of stainless and the replacement cost of the material is going thru the roof. If you need one, I can make a deflector for you rather quickly. You will still have to use a pizza plate with holes in it ( I suggest the Martha Stewart one from Kmart), but this clips/crimps on to the original grate in the original position and moves the hot air coming from the fire box out into the middle of the smoker with a 45 degree pointed towards the bottom. I have used one of these for years with my SnP Pro. The nice thing about it is that it doubles as a BBQ Heat Shield and allows you to use the grill section as a large BBQ. When you turn it around, you can place charcoal in the cooker section and place the 45 degree plate over the hot coals. This prevents any direct heat and flare ups in the cooking section. Anyway, I know many of you are waiting for the other mods and I will finish them late summer. Until then, the best I can offer is the heat deflector.

I am already concerned about my silver smoker and the firebox, there was a white ash buildup on the outside of the smoker and the vent plate. Thanks for the mods!

Thanks Alien. I just recently bought a Brinkmann Smoke N Pit Pro for $40 on craigslist.org. The guy was using it as a grill and didn't know how to smoke. There is some surface rust in and out but I think it would clean up real well. Thinking of having someone sand blast it. The metal looks a little thicker than my Char-Griller. Do these cookers hold the temps well with the mods done. How long can you go on one load of lump if you use a basket and the minion method. On my Char-Griller I can get about 4-5hrs initial then about two after that. I was so excited when I saw it, cause I knew exactly what it was. I bought it mostly for the firebox cause I'm building a smoker out of a 55 gal drum, however I may leave it alone and go buy a Char-Griller firebox for the drum smoker. Thanks again for posting such great pictures and step-by step instructions.

Really excellent stuff alien.... well done!

As to your comment about Brinkmann acting on the needs of their customers, having been a distributor of their products for some time now, we have suggested several cheap and easy fixes to some of their units, but they just don't seem to be interested. Sad
In fact the new models they are releasing seem to be focused on saving production costs, as opposed to improving their products.
The good side of this, that it will give clever people, like yourself, to take advantage and market products that will improve the out of the box units.

Keep up the great work.

Apparently, they have bought out charmglow also. One of the things that really bugs me is that they have changed their models but not the photos on their web site. They still show the older models and not the new junk.

How far down does the heatshield go on yours?? the one I made I made too wide so it only goes down at 45 degree angle for about 4 inches then it hits the sides of the wall. Should I cut the sides a bit and angle it down further??

Some questions about the thermometer mod. I currently have mine in the pre-drilled location on the upper portion of the large door/hatch.

1. What is the drill size to drill a new hole down by the door handle?

2. Since the original plug is history, how do a plug up the original hole?

If you have the original gauge, use it to fill the hole (that’s all it is good for). Or you can get a plug from your local auto parts store. Hole size for the new (and better) gauge will be on the box.

OK, I getting there little by little... but have another question. What kind of tool is best used for ash removal while the smoker is going? It's such
a small opening in the side of the firebox.

Just open the whole firebox door. I clean out the ashes with a big slotted metal spoon. (for deep frying)

I use my Alien Bolo; It fits exactly in the air damper hole and allows me to scoop up ashes all the way back to the end of the fire box. When I pull it out, it clears a tunnel for the air to flown in. ...........But then again, I am a bit prejudice towards this tool.

Now you've brought up a senitive subject...

I used to have this big professional grade spatula that was VERY similar to size and thickness to your tool (of course it had a bend to it). My wife just me throw it away after years of taking up space in the drawer because it was really too large to use with home pans...

But now, I get to say those words to her that we all dream about, "Dear, I TOLD YOU SO!"
