First half of the cook fat up!
Flip next quarter fat down!
Flip last quarter fat up!

If it's good enough for the Baron of BBQ it's good enough for me! Wink Laughing Wink

So my answer to the Fat Up, Fat Down, do you Flip question is a resounding YES!

Fat down for me.

Mop every 2 to 3 hours. Rotate (in my offset) during mop sessions.

Put in foil pan fat side down around 175 F internal and cover with foil.

Bark + moist, tender meat.
