Thanks a million Doc....Great info. I will probably make a pest of myself with questions but I think this is the first, first hand feedback I have seen on the site. I do appreciate your taking the time to address all my questions. Any chance of you posting one or two more pic's of how you did the temp probe (maybe just a different angle to better see what clips you used and how you attached the probes to them)? I think the probes being under the grate is a great idea! This is a pet peeve of mine in trying to locate the probes of my ETC73 in a good spot on each grate but not loosing cooking space. Placed to close to my chosen meat to be cooked and I get false too cool reads until all surface temps have stabalized. Too far out towards the edge and I get false high temp reads as all the heat is comming up the sides around the water pan. Not a huge deal to overcome, I'm just having fun learning to use this stuff and make the most of it. Again, more cooking room will help with these issues. I will have to McGeiver up an "under grate" temp probe holder..Thanks for the idea..again...Looking forward to the cooking post..RJ in Montana
