Preparation
    Marinate shrimp with cilantro pesto and place on skewers.
    Grill approx 2 minutes per side, remove, and set aside.
    Grab a bag of bite size chips or tostada (I use a pumpkin seed tostada)
    Then begin assembly: Chip, Guacamole, chipotle sauce, and shrimp


Guacamole
    Avocado 3 each
    Tomato (diced) 1 each
    Red Onion (diced) ½ each
    Lime for Juice 1 each
    Cilantro 3 Tbls
    Jalapeño (diced) 1 each (deseeded)
    Sour Cream ¼ cup

Place all ingredients in a bowl and mash using a whisk.
Salt and pepper to taste.

Grilled Shrimp
Shrimp (peeled/deveined) 24 each

Cilantro Pesto (1 cup)
    2 cups, packed, of cilantro, large stems removed
    1/2 cup blanched almonds
    1/4 cup chopped red onion
    1/2 teaspoon chopped and seeded serrano chile
    1/2 teaspoon Kosher salt
    1/4 cup olive oil

In a food processor, pulse the cilantro, almonds, onion, chile, and salt until well blended. With the food processor running, slowly add the olive oil in a steady stream.

Chipotle Puree (¼ cup)
Take 2-3 chipotles and adobo sauce and puree in blender.

These things are so good! I could easily eat these all by myself...though I wouldn't be having anything else. Smile

Give 'em a try some time for friends and see how fast they go. I gaurantee you won't make enough.

they were a big hit and definitely something i will do again...and again. i switched it up a bit but the basics were still there. i switched up the cilatro pesto for more of a basil chimichurri. plus i added some sour cream and honey to the chipotle puree.

thanks again for the post. an appetizer like this is a great one to have in the arsenal.

Interesting twist to it...but that's the beauty of cooking you can make them your own by tweaking them.

Shrimp is on top of the food chain for me,I don't think any one could make enough to feed me Laughing ....Those look awesome,wish you posted a couple more pics of them. Very Happy

very Very nice my friend good to see other folks goin the extra mile . now the following could be hazardous to your waistline but.... in my humble opinion the truly common denominator with both shrimp and pesto is garlic,garlic,and maybe, just a thought.. a little more garlic. thats gonna be tuff to quit
