| I'm doing a couple of racks of BB's right now, and my temps have stayed in between 230, and 190. Is that ok? It seems for about the last hour they have been hovering 190, and 210. Should I let them go a little longer than 4 hours? |

| Let them go as long as they need. You can't cook by time, best you can do is get an idea of the time needed, but it's not baking a cake, they are done when they are done, and not before. |
