I use this recipe for chorizo, it's pretty tastey. Cook some up in a pan, add some whisked eggs and serve in fresh warm flour tortillas.

Chorizo
1 lb ground pork
1 teaspoon salt
2 tablespoons chili powder (or any other type you like, chipotle was good)
1/4 teaspoon cumin
1/2 teaspoon oregano
2 cloves garlic finely minced (I use a lot more)
2 tablespoons vinegar

Mix all ingredients, refrigerate overnight, then it's ready to use. If you want more heat add red pepper flakes.

I love chorizo! I will give it a whirl this weekend, just as is. Although I must add, does chorizo typically have vinegar in it? I am curious what it adds/does here?
