I'm getting hooked on this stuff.
For my second attempt with the smoker I decided to smoke a prime rib. We had one in the freezer si I figured what the heck. It came out great.
This was about a 5 lb. roast and I kept it simple. I inserted 10 -12 good sized garlic slivers, then rubbed it down with a light coat of olive oil, salt, and pepper.
Started it around 1 PM and it was done around 6. Probably would have been done sooner but i got distracted and let the temp drop too low about 3 hours in.

On the plate with some fresh french fries.

I've been thinking about doing a rib roast. What kind of wood did you use? How hot was your smoker and what temp was the meat? What time is dinner? I still full from friday's ribs, chicken and butt and last nights catfish. Now I'm ready for beef. _________________ Scooter

We haven't done a prime rib in a few months but that pic is enough to make me want to go by one right now. If only I didn't have ribs on the Egg right now, I probably would! _________________ Chris

you,ve made up my mind next smoke is prime rib yes call me a copy cat put those pic,s put me over the edge!!!!

The smoker was 220 on the grill and I took the meat off at 155 internal. The wife and I both like med rare and it came out perfect.
I cooked this using Kingsford charcoal and Hickory chunks. Total time was about 5 hours for a 5 lb roast. It probably would have been done in 4 if I hadn't let the temp drop about 3 hours in. _________________ CharGriller Silver Smoker with mods

| Looks great. I have been wanting to try a rib roast and was thinking about the rotisserie but I will have to try the smoker. |

Just a thought - 155* seems way to high for med rare - more like well done - yet the pics show med rare to med. Have you checked your thermometer lately? I pull at 125-130 for med rare. |

Thermometer is probably off a little. When I looked at it just now it shows 140 as rare, 160 as med, and 170 as well done. _________________ CharGriller Silver Smoker with mods

You know, I was actually going to go OUT to dinner for Prime Rib this Friday. But now, I am SURE I will just get one to cook at home (4 adults) and be able to have SECONDS without an extra charge like a restaurant would..  _________________ Often imitated but never duplicated |
