One of those weird thing in life. I'm a Texas native but never owned a smoker until I got tired of not getting good BBQ and paying through the nose for reasonable facsimiles here in Jersey.

I joined a couple of weeks ago after I got a smoker from my wife for Father's Day.

With a lot of great information from you guys I fired up my new smoker for the first time this morning and it went pretty well for my first time out. Smoked a pork butt and 3 racks of baby backs.

Now I'm hooked!

Here are a couple of pics.

I broke the fat layer with my tongs but it didn't hurt the flavor one bit.

One of the baby back racks. Wasn't as tender as I'd hoped but i guess that will come with practice.

Anyone got a good tip for smoking a prime rib? I have 6 lb roast in the freezer I'm thinking about cooking for July 4th.
