Just picked up an OK joe's smoker off of craigs list for my son. I can't find the model but it looks just like the 16" Horizon Ranger.
I'm pretty sure I need to add a baffle of some type at the smoke box/ cooking chamber entrance.
Will I also need some type of baffle at the point where the smoke enters the vertical chamber?
We spent this morning cleaning, sanding, and painting the beast. Got it oiled down and seasoning as I type.
Now the good part, paid 250.00 for it, have 20.00 in paint and material in it, 270.00 total.

If you have an OK Joe offset, Horizon makes convection plates and probably has one that will fit yours. If you e-mail them with your questions, they will respond promptly. I had mine within a week of my first correspondence. Based on my experience, you may want to extend your exhaust stack down to grill level and add a charcoal basket if that is your choice of fuel. Great purchase - mine was bought new and cost nearly $600 delivered and that was almost 15 years ago. I think you will pleased with your purchase! Very Happy

I have the 20 inch model (The Longhorn). I extended the exhaust down to grate level; put some stove gasket around the cooking chamber door; added a charcoal basket from Horizon, as well as a heat dispersion plate.

I have a horizon RD Special and love to cook on it. Reading your replies wanted to know what extending the exaust pipe to grate level does, in addition - did you weld something to it internally - or how did you do the mod?

By extending the exhaust to grate level you trap the heat down to the level of the food. If your exhaust is above that level, the heat simply rises and escapes. Because the exhaust on the OK Joes is on the side of the cooker, I found an stove pipe elbow at Home Depot that fit inside of the opening and basically forced it into the opening. The exhaust is now about 3/4" above the grate. By the way, do not use galvanized material for this purpose.
It reportedly can give off a toxic substance when heated.

Thanks for the replies, I'll try to fabricate some baffles. The only exaust this cooker has is on top of the vertical smoke chamber. Thanks again.

Is this different than tuning plates??

On the OK Joes there is a big opening between the fire-box and the cooking chamber. I purchased a dispersion plate that connects right below the cooking grate and extends about halfway down the cooking chamber. it is designed to force heat down the chamber to eleviate "hot-spots"
