I suggest a crisp white wine. Perhaps with hints of peach or apple.

Even in drink, pork loves those fruit flavors.

EDIT: for those looking I like either a pinot gris(or grigio) or a Verdicchio wine to go with my pork.

With beef it would have to be a red wine and being a good NC boy I'll only give suggestions for pork today. Laughing

Everytime I drink wine I get a headache so I'm going to have to pass on the wine. Nothing like an ice cold beer on a hot and humid Florida BBQ day!

I like beer but can only have a few before I feel bloated. I drink wine on a nightly basis. I like a zinfandel (red not white the kool aid stuff). It goes with any bbq really well. It tends to have a spicier flavor than other reds. Or a syrah is a good 2nd choice.

Zinfandel with BBQ is the best, IMO. Grilling a steak, Cabernet Sauvignon. Smoked salmon, break out a white wine.

This weekend I'm throwing a little bbq party. For starters I'll be serviing some smoked salmon and serving a white Burgundy. 2006 Les Héritiers du Comte Lafon Mâcon-Chardonnay Clos de la Crochette

Later I'll be serving some dips and ABTs. I might pull out a Tensley Rose, but I doubt it. I think after the salmon we'll be going straight to a magnum of 2005 Ridge Lytton Springs (USA, California, Sonoma County, Dry Creek Valley)

Cheers.

My favorite area to taste wines is Dry Creek. I'll be heading that direction on Saturday but for a different reason. NASCAR is in town. I have a sister that lives in Peteluma just south of Dry Creek and her husband is in the limo business. Makes a good combo, limos and Dry Creek.

Sure I'll pass it along. I'm working right now but give me a couple days and I'll be home. The plums are 'bout ready to pick now so I'll probably start a batch this week. Cool

Potassium sulfites are the cause of most headaches when drinking commercial wines. Sulfites are used in the wine making process to sterilize the wine making equipment and also added to the must (wine under fermentation) up to 120 PPM, to prevent wine oxidation/spoilage.

I agree, there’s nothing like a glass (or two) of good wine with rich favored smoked foods, I prefer the complexity of the full body reds but a cold white wine goes down mighty well.

I make my own goodness, 75% Cabernet Sauvignon and 25% Merlot. It ages in bulk for one year and then bottled to enhance its flavor and bouquet. Yeah I know, it is a long process but the end results are astonishing.

I fully agree: Laughing Laughing

I prefer a good beer, but a little Merlot can hit the spot with good Q. As a matter of fact when I foil my spares I add a splash of the merlot, gives the ribs a really nice sweet earthy flavor.
