I'm not a fan of the typical brown sugar and paparika based rubs for beef. They taste great on chicken and pig, but not so great on beef in my humble opinion. I've been using a rub more like something you'd put on prime rib. I use minimal paparika, salt, no sugar, garlic, onion powder, black pepper and a little thyme. Also, I brine it. I use a base of beef broth with the same spices in it.
I usually mix up a horseradish sauce to go with it. Try brisket this way and you won't look back!

Try it with just salt, fresh cracked black pepper and a shake of Garlic powder some time, that and a good choice of smoke wood can produce a surprisingly complex flavor profile. _________________ Here's a change Robert.

I've enjoyed having a rub with a more Southwestern style spice mix for brisket. I like some oregano and cumin in my brisket rub, along with powdered chili pepper, cracked black pepper, a little salt, and some citrus zest, among other things. I don't use any sugar in my brisket rub.
A quick rub for me is to use Cholula Seasoning, if I'm not mixing up some concoction myself. _________________ Let's hope SoEzzy can ditch his heavy hand on photos in 2016!

| Has anyone tried cooking a brisket with absolutely no seasoning leaving you with just the flavors of the meat and the wood? I have thought about trying this to see the result but i would be interested to hear from somone that gave it a shot. |

I've done that by accident before! Not only with brisket but ribs as well.
