overnight pork butt!

aight guys heres the run down do far:


butt/cooking time/smoker:
7.5 bone in pork butt
used the traeger 075 texas elite
11.5 hours on the smoker fat side up
took it off @ an internal temp of 200
now mop,no foil
its now resting in foil for one hour

prep:
injection
mustard
rub
sat in the fridge overnight,i then took it out and rubbed again

here's is a pic of the finished product.i KNOW its tender because:
1.when i pulled the thermo out it was like it was gliding through semi-melted butter.
2.when i flipped it to take the pic it almost fell apart!

Hey big Jake: in your recipe is pork butt the same ass (sorry typo) the same as HAM?

no i believe the ham comes from the back leg and the "butt" comes from the front.(or shoulder)
someone correct me if im wrong,cuz i could be.

aight yall here is the finished product.i brought the knife out but didnt end up using it.i just "pulled" the pork.
oh and i used the kfc cole slaw recipe.which didnt taste like kfc at all.it was much better!(not over sweet and drown in sauce)
this is the best pork butt i have made so far.and the best part was i set the traeger and went to sleep last night!

I think many of us use the site as a secret weapon, although I do point it out to the folks who want to go beyond the $39 smoker, boiled ribs, or store bought sauce.

That's Great. Especially about setting the traeger and going to bed. I sleep in 45 min intervals when I smoke over night. Sad

The smoke ring on that is nice and deep in the meat and pan of pulled pork looks very tender. Nice work!
