The food has been good so far, all but the brisket, are all briskets real salty or am i buying the wrong type?

Only if it's corned beef brisket, then it will be very salty.

Thats exactly what it was, so i assume i need to go to the meat market and buy just a plain brisket. Thanks, i knew something wasnt right because that type of brisket is nasty, lol.

Actually what you made was pastrami (aka = smoked corned beef).

If you follow these steps you get some pretty good eats:

soak corned beef in ice cold water in the fridge for 1 hour; change water,

soak 2 hours, change water;

Repeat, change water,

Soak over night and rub with your fave rub (I use Montreal Steak seasoning) and cook to internal 145*f ish pull let rest. Put in freezer till near freezing and slice thin on deli slicer. Good eats.

Been a while since i posted, almost 6 months to be exact, thought id drop by and see how you guys were doing and to let you know i still haven't finish my cooker, lol, I've been using it to much to finish it. its mostly done anyways, I'm cooking chicken, ribs and a butt at the moment Smile. I had thought about selling it and building another one. if someone really wanted it i probably would but I'm fine using it. well my stomach is growling so ill see you guys around, ill check in more often.

Hello Smokers, been awile so i thought i would drop by to say hello. been thinking of starting a small patio smoker. getting ready to put this one up on craigslist and make someones day for getting a good deal.

I wanna build one i can roll up on my trailer so i can take it to deer camp with me, the way it is now i would have to leave the 4-wheeler and other things behind to take this smoker to camp. Thinking of making an OK Joe Longhorn clone with a few mods.

HillbillySmoker, welcome back. Been a while.

I have an idea for you. Build a UDS for camp and keep this unit. That is unless you aren't happy with it. If that is the case then sell it, make a UDS, and make one you like... Laughing

Hey man how yah been, any new build lately?, I have a weber charcoal grill up camp, basically what i want is a good small smoker for the back patio that i can put up on my trailer alongside the 4wheeler and other stuff to take up for deer season. To be honest i just dont cook that much food to justify having the big cooker, just not efficient for doing small cooks, which is what i do. im thinking of doing the Longhorn clone in 1/4 inch stainless, ive never seen one so i thought i might build one, and selling the big one will help in the cost Very Happy

Got some stuff to build a smaller one. I too wanted something smaller to the weekends. If I ever get started on it, I plan to do a DP clone.

Thanks Kam, good to see your still here, im in the process of figuring my material so i can see what the stainless is going to cost, if its to much ill just go with iron. i put my cooker up on craigslist last night, well see how that goes. i wont be starting the new build till i sell the other one.

Well i just sold my smoker Crying or Very sad was like watching your kid move out and driving away, you just stand there and watch it go down the road. the people that bought it will get better use from it, they plan on doing big cooks with it so thats good. guess i need to go from the thinking stage to the action stage for my patio unit I'm gonna build.

This was a fun build but i guess its time for this post to fade away now Sad

Yes, the smoker is welded to the trailer so its one unit.

Thank you sir, i dont have the time or money to build them to sell, my next one is gonna be small and will most likely be my last so i wanna build one that will suit my needs.
