| I have a Cheap Off set smoker that i am getting my feet wet with and am having issues with getting a good steady temp at or around 225 -250. So what i was thinking about doing was adding some lava rock to the cooking chamber on the bottom grate....? im thinking this will help keep the heat in the cooking chamber longer than what im getting. My question is that on all the packaging of lava rocks it states to be used with gas grills, Would their be any harm in using the lava rocks in the cooking chamber like i have mentioned above to absorb and keep the heat in it....? |

Ditto on what JeffT said. There are a lot of variables to maintaining constant temps in an offset, I have never heard of lava rock in one and would check other things like intake air to exhaust air ratios. When i converted my big homemade char coaler to an offset I had a devil of a time keeping temps down below 300°. Through the help here i can maintain a pretty good 250° to 275°. I have found that smaller offsets need tending, I can leave mine comfortably for about 45 Min. after that chaos. I never use my exhaust damper it stays wide open I control through the intake. It has taken the better part of a year of cooks to learn this cooker. If you don't want to waste meat grab some beers build a fire in it and start taking notes, don't rush your adjustments it takes time for things to equal out. Good luck have fun and show pics.  |
