I will be using my Char Griller for the first time this weekend. I will be doing about 12lbs of butt and 3 racks of pork ribs. My question is, when using an off set fire griller do I always use a liquid bath under the grill? Is this something to just regulate the heat, or does it really add moisture to the meat when cooking?

It definitely adds some amount of humidity, though the amount is open to debate and depends largely on (a) the humidity where you live and (b) the tightness of the seals in your cook chamber. I haven't been using one since I moved up to the Lonestar, but I am considering doing it once or twice just to see if I like the results any better. I pretty consistently used one in my old Char-Broil (which is roughly the size of your Char-Griller). _________________ Matt
