A hardcore charcoal fanatic here - I only use gas in my car.

Equip:
100lb (of meat) offset smoker
22" Weber kettel

Use: Hickory/hardwood charcoal mixture with a base of Kingsford

I will switch up with apple or cherry wood when cooking poultry & alder or pecan when smoking fish, but use hickory almost exclusively for any other meats
