Good Day Eh! Fat Pinky here, and I live in Ottawa Canada. I've been a big fan of true BBQ for a long time which is a bit of an oddity for someone in my parts, because very few people up here really understand what true BBQ is. Like most, they think get it confused with grilling. Over the years I have learned what true BBQ is and have managed to produce some tasty results using a good gas grill and wood chuncks cooking off the heat source. But its still not real. So I've decided to step it up a notch. I'm going to build a Big Baby Smoker. I have managed to secure a wood source and to my surprise he has some hickory,white oak and of course good Canadian maple ,well ok the hickory was the surprise. My biggest problem is I've never opperated a smoker before and would welcome any pointers or do's and don'ts especially when it comes to heat control. Also I've only seen the plans on this website and the visual modifacation shown, so if any one out there has some mods that are not pictured or a more updated plan I would really appreciate it. Welcome and good luck with your new smoker! There are a few threads on sizing your exhaust so that you get a good draw. Check out the search function.
