Maybe those are the items he's leaving out of the posted recipe so you will become frustrated and continue to purchase his pre-made rub for $3.50. You don't get your own 1 hour show on basic cable by being mister nice guy.
The ingredients list salt first so the reason you can't get it right is because you're not adding enough salt.
Weber just came out with a series of 4 "Dry Rubs" they sell at Sam's. One is a basic bbq rub that looks pretty good. I bought the black pepper and herb rub and it's ok. I didn't get the bbq becasue the ingredients are almost exactly the same as the rub I make myself. _________________ The American Atomic Buffalo Turd Society of America

Actually Emeril got where he is by being both a nice guy, and an accomplished chef.
From Culinary school to running the Commander's Palace kitchen, to many successful restaurants of his own, the guy does have it going on.
The show was actually scheduled to be cancelled shorty after it debuted I do believe, but loyal fans bombarded the network to keep it on. The rest as they say, is history.
As mentioned though, his rub is loaded with salt.
So are most other's, along with MSG (which we have also debated here at length).
The search for the Holy Grail of rubs of course will continue.
Use what you like, and experiment making your own. Part of the fun of the whole deal I'd say!  _________________ BBQMAN

Sorry, I forgot you dated Emeril for a while back in the late 70's.
I never saw the attraction with him. He adds some garlic to a dish, yells BAM and people go nuts. I know he's done a lot for New Orleans since Katrina and that's awesome.
I have tried to watch his show a few times and I just can't stomach it. There was one episode that I did watch and it was great. Emeril was making a pecan pie and basically said educated people say pecOn and only truckers say pecAn. He quickly realized what he had just said and spent the rest of the show apologizing to truckers and talking about how great they are. Is it just me, or was that reply a bit snippy? If you'd put in some kind of emoticon or expression to indicate you were kidding, that'd be different. I mean, BBQMAN just pointed out a few facts, and your reply seemed to indicate you've got some sand in your crack.

Nope, not being snippy. BBQman is one of my heros and I figured he had a sense of humor.

I find it strange as the other rubs he gives ingrediants/measurements to on his site he also sells the same way...Why do it to the rib rub and not numerous other ones, especially something like his essance which has to be his top seller |

I agree, I have a bottle of the BAM dust beside the stove at all times. I ove the stuff.
Personally I like Emmeril and miss his show since it went off the air up here in Canada. If you look beyond the show man ship he had some excellent recipes and presented them in a way so the average person could try something new. _________________ Chargriller Akorn

Thats the one I posted up earlier. I find this recipe interesting because he uses single ingrediants and then his essence mixture wich could be used as a rub itself. I too love his essence and use it on alot of things. _________________ Traeger 124, 125 |
