Well, I've yet to find a more perfect rub for ribs and butts than Emeril's Rib Rub...However, I used to be able to get it on sale for $.99 Now it's $3.50 all the time. WAY TOO MUCH for something I use all the time. So, I'm still looking. Here is what we KNOW are in it but have no idea the amounts and what "type" of sugar he's using. So, figured I'd ask again.
Crushed Red Pepper
Garlic Powder
Ground Mustard
Onion Powder
Paprika
Salt
Sugar
Other Spice |

you could try any of the number of rib rubs that are available. The homebbq.com rib rub is great and has served me well..
as for the type of sugar he is using, probably brown. You could probably make your own if you worked at it...or you can google it to see if someone else already has...also I always found the emril stuff way too salty.. |

| I sometimes use Emeril's R.R., mostly for my wifes taste as my rub is a littttle too spicy for her ( she thinks fresh ground black pepper is hot). Have never tried to clone but to me it tastes like it also has a little cumin, and some basil. Just my 2 cents worth... |

As far as I know he uses his essence recipe for ribs.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Well, I just found this.
Kansas City Style Rib Rub:
1/3 cup light brown sugar
1/3 cup sugar
1/4 cup paprika
2 tablespoons Essence, recipe follows
6 tablespoons kosher salt
2 tablespoons onion powder
1 tablespoon garlic salt
1 tablespoon freshly ground black pepper
1 tablespoon chili powder
1 teaspoon mustard powder
1/2 teaspoon poultry seasoning
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon cayenne pepper

No, they are different than both of those. I've tried the one below and it's much different and is missing ingrediants listed on the label.
The tope one is missing crushed red pepper and mustard powder.
Even if I can find larger containers like sams, that would be fine, depending on cost

Could it be this one? Found it on the Food Network site. Wasn't listed as a rub. Just ingredients to go along with some ribs.
3 tablespoons dark brown sugar
2 tablespoons Essence
1 tablespoon salt
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon freshly ground black pepper
1 tablespoon cayenne

Found this on his web site. Called rustic rub
Ingredients
8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder

I bought some of that last month when I ran out of rub at a South Florida event.
Way too salty for me.

Do Yourself a favor...At least TRY the Instant Gourmet Spices that
BBQMAN suggested...I did at BBQMAN'S offering and couldn't be happier !
Top Quality stuff,reasonable prices and they distribute locally.(in my neck of the woods,anyhow.)
Check out their Website...Perhaps BBQMAN might care to share a bit of His knowledge of the product and the Family that produces It.

1st and foremost, I would like to say that I do not get any breaks on the products I buy from Lamarche Enterprises. (in plain English, this is not a paid endorsement)
I promote their products because it is great stuff from great people!
We buy the original Gourmet by the 5 pound tubs, 2 at a time.
They are long time family friends, that happened to put together a spice business. Their products are so good that most Super-Targets now carry the brand.
I use the original on just about everything. The steak-awake is also excellent, and has finely ground espresso coffee as an ingredient.
Unlike many similar products, salt is the third ingredient on the list for the original. A big plus in my book.
Try it, and let me know how you like it!

| I'll give it a whirl...Never hurts to have extra rubs on hand. However, I really dig the emeril's and I use it for quite a few things so I'd like to find out how to make it in addition to continuing to try new rubs/sauces |
