Does anyone have an internal temp for a cured smoked turkey? I am curing the bird in tenderquick and apple juice, and have read that an internal temp of 165 is adequate, any ideas on the internal temp I need to reach?

With the thermometer parallel to the keel bone in the meat of the breast 165 F will be good, on in the thigh 175 F, the difference allows you to have both cooked and no pink, (or uncooked meat), on the bone.
The legs will be relaxed at this temperature and you can learn to wiggle the legs to get a "feel" for if it is in the zone.
I test with the leg test first, then reach for the thermometer, as the test is "fairly" accurate and doesn't produce a hole in the flesh like the thermometer does. _________________ Here's a change Robert.
