First briskets with a WSM. I have done some smoke/oven finish with the Brinkmann this will be the first for a complete shot on a smoker. Twenty degrees outside. As I said all day, "Lots of snow." I need to start at about 6 AM. 5.5 lb. each. I am excited! This is the first picture post so I am on thin ice here.
I have adjusted the pictures twice now. Still learning.

The first one is gone. I thought it was just a tad dry in the middle. This one sat for a few hours longer and it seemed better.
The WSM did a fantastic job. Still chugging away 15 hrs. later. _________________ Magnum |

I usually slow boil my briskets for an hour before cooking.  |
