Got a sale on Massive turkey legs so the wife decided that I should smoke them up . Any suggestions on what to rub on them ?? Should I leave the shin on or take it off.

An EVOO slather and your favorite poultry rub, leave the shin on, it makes them easier to pick up and hold while you chow down.

What he said, and I would add they are really helped by finishing on a hot grill to crisp them. |
