Maybe I missed something there, and I know you were using and ECB for reference, but I cook year round with sand in the pan of my WSM and can control it to most any temp I want to maintain with fuel and air management as long as I don't overshoot my target temp initially. I use the Minion method of fire control and bring the temp up slowly... works for me.

James, I guess I should clarify a bit. Sand in the pan (in an ECB) during summertime will make achieving 225 degrees very difficult. I use it during the winter and when I want the higher temps. All other times, I use the water. Unfortunately, an ECB does not have the air control of a WSM and is adjusted by means of fuel consumption.
