I started with 5 Chicken breasts. Cut the larger end into 1"cubes. I took bacon and cut each piece in half and wrapped the Chicken cube and held it with a toothpick. I then dredged them in a mixture of..
2/3 cup Brown sugar
3 T. Mexican Chili powder
1/4 tsp. Cayenne pepper

I also cut up some chicken cubes and marinaded them in Lawrys Terriaki sauce. Wrapped in bacon as well, but NO dredging. I had a few pieces of bacon left and dredged them in the rub mixture as an experiment. Sort of a kicked up Pig Candy.

I smoked this at 250 for about 1 1/2 hours on a Traeger with (www.cookingpellets.com) Apple wood pellets. I did take a marinaded piece of chicken and dregded it in the rub and smoked it without the bacon wrap to see what the terriaki and the rub tasted like together. It was good as well.

Both the rubbed and the terriaki bites came out great. There was a nice combo of heat and sweet on the rubbed bites. Here are some pics.

Lookin good! I will have to try this. My wife won't eat ABTs, so this would be a nice alternative. The close up looks like scallops wrapped in bacon. MMmmmm, bacon...

My wife won't eat ABT's either. But she loved these. Couldn't be easier to do.

those look awesome Flatlander....... i have tried making these with a pineapple slice in them too......I have been making these ever since I tried them at the local Taqueria, they make these with a jalapeno slice inside and then serve them with Queso to dip them in!!!!
