I'm going to smoke a few pork butts this weekend for some pulled pork sandwiches.
I've never made "Carolina Style" BBQ before so I would like to try a few recipes.
Im looking for suggestions on a good Carolina pork Rub and a good vinegar based sauce.

I don't know about any specific rubs that they have but here's a simple sauce.
1 C. Cider vinegar
2 Tbsp. Sugar
1 Tsp. Cayenne pepper (or more)

Here's a couple I mess around with.
2 quarts cider vinegar
1/4 cup salt
2 tablespoons cayenne pepper
3 tablespoons red pepper flakes
1 cup light brown sugar
1 tablespoon hot pepper sauce
and then try this from paul Kirk
2 cups cider vinegar
1 cup water
3 tablespoons coarse ground blk pepper
3 tablespoons fine sea salt
2 tablespoons hungarian paprika
2 tablespoons granulated cane sugar
1 tablespoon louisiana hot sauce(or tabasco is ya like)
1 tablespoon worcestershire
1 tablespoon chili powder
For both recipes bring to a boil to disolve the ingredients and then let sit till cooled before using.
The first one is closer to a real NC style. Ya just have to have red pepper flakes.
Oh....and if ya feel like cheatin' I suggest http://www.georgesbbqsauce.com/index.asp Strongly suggest the hot.

Sauce:
2 cups apple cider vinegar
1 tbsp balsalmic vinegar
1 tbsp white vinegar
1/4 cup white sugar
tsp red pepper flakes
tsp black pepper
tbsp chili powder
2 tbsp ketchup
3 tbsp kosher salt
1 cup chicken broth
tsp worchestershire

Looks like I'm going to be busy this weekend! I am definitely going to try a few of these.
I knew this forum would have the best and most helpful info I was looking for, Thanks.
I'm going to give Roxy's mustard sauce a try first!
Roxy, if you happen to read this post, Please, let me know what you rub on the pork prior to smoking?
Any opinions on using a spray bottle with cider vinegar during smoking? _________________ "What's all the hubbub... bub?"

I let my rub set for the first 2 hrs,then I spritz every hour with 50/50 apple juice and apple cider vinegar,works for me.I also mix some rub into applejuice and inject my butts,this is just my personal preference. _________________ Horizon Offset (Marshall RD Special)

I like a rub with lots o sugar, brown or turbinado, creates great bark.
I never measure but probably
1/4 sugar
1/4 garlic powder
1/4 paprika
rest of mix red and black pepper and whatever is in my cabinet
Plan to have done well in advance of eating times, the resting time is pretty important imho.
Try this sauce just for kicks, I always put 3 types of sauce out when I do quantities (vinegar, mustard and ketchup based) ketchup based is the favorite by far. The vinegar based is a tried and true ENC recipe and the mustard based is Roxy's.
2 parts ketchup
1 part vinegar
sugar to taste(heavy hand)
Worcestershire to taste
garlic powder to taste(light hand)
red pepper flakes |

It's pretty good, but mustard sauce, aka "Carolina Gold", is usually a South "Carolina" sauce; you won't see much of that in North Carolina. In NC we have two basic sauces; Lexington style with ketchup and East Coast style without. You can also find both of these sauces used frequently in South Carolina; hence the generic "Carolina Style BBQ".
I like both and even though I live more towards the north west of NC, I still prefer the east coast style a bit more. Trying to get die hard BBQ fans in NC to eat mustard sauce is like trying to herd cats. |

I personally like both styles of sauce too even though I have never LIVED in that region. When I started my catering business I offerd "Carolina Style BBQ" with that regions sauces and about got ran out of the place . When people are not used to a certain kind, they are not so inclined to try something new.
Now I offer a sweeter, tomato based sauce(s) that are more acceptable to more guests. Even though I do use a "finishing sauce" on my butts that I get from Bourbon Q out of KY that is pretty darn good...IMO. And then the regular BBQ sauces offered on the side. _________________ Often imitated but never duplicated |

Mutha Chicken is right, bbq in NC is a religion and nobody worships mustard sauce, I can tell you that. And, many a fight have broken out over whose sauce is better, lexington or eastern NC style. I'm from Winston-Salem, which is 25mins from Lexington, and am partial to that style. It's just a little sweeter. Eastern NC style is excellent, too. It's a pretty simple recipe, vinegar, salt, sugar, water, red pepper, and red pepper flake. LMAO!!!
I acted like I had ONLY made a mustard sauce one time. Looked alot like the salsa commercials where they all look around and say "Get a rope!".
It's just not ever going to be thought of well around here.

Just any old standard butt rub will do ya fine. I dont spritx or spray butt, I just let it cook oh naturelle. _________________ Chargriller Akorn
