Does anyone have a recipe for what would be a good base to try and make something similar to the sauce at Leo's BBQ in Oklahoma City?

I need to go ahead and buy some when we are up there later this month.

I haven't actually been to Leo's yet but since I started a new job downtown. I'll be trying both of their locations soon. I'll give their sauce a try and see if I can figure it out.

Let me know when you're going to be up this way and maybe we can hook up somewhere for some Q. Wink

Leo's sauce is definitely different than any that i have had. some people aren't crazy about it, but i really like it! been trying to figure it out myself.....maybe some cloves or cinnamon?? don't know for sure. i do know that his strawberry-bananna cake is worth fighting for!! Laughing

We found out the weekend before Christmas that the 36th & Kelly location was still closed, so we ended up going to the downtown location.

Drove by the 36th & Kelly location just a few weeks ago and it appeared to be open.

I've been on a quest to figure out this sauce for some time now.

The listed ingredients are:
Vinegar
tomato paste
dextrose
spices
natural flavor

Here's what I've tried:

On the vinegar, I think it's just plain white vinegar. I've tried apple cider but it just wasn't right.

I've tried tomato sauce in place of the paste but it gets too thin when you add the vinegar. Definitely go with the paste.

Dextrose has been a problem. The definition of Dextrose is a corn based sweetener. I've been told that Karo syrup is a good substitute for dextrose. I also found graulated dextrose at the health food store. I think they must use a syrup of some kind as the powder made the sauce grainy.

The spices are, of course, key here. I'm guessing but I believe there is some allspice, a little cinnamon, maybe some nutmeg. I'm not sure about mustard either dry or paste but there is something in there that gets you right on the sides of your tounge that I can't figure out.

Natural Flavor? I don't have a clue.

I did see on the Food Network feature that Charles cooks the sauce for a loooooooong time.

This is the best sauce I've ever had and I'd like to be able to re-create it for my own back yard Q.

Don't remember much about the sauce, but that strawberry-banana stuff is great!! Guess I'll have to have my buddy at Bancfirst grab a bottle of each flavor, and ship it to me. Leo has a webpage, but doesn't sell and ship. Shocked

Hey Mike,
I talked to you over on the BBQ News forums. Get your hands on some of this sauce and see if you can help me crack the recipe.

You know a hacker attacked their site and they lost everything. I just didn't get around to re-registering until recently.
